Ingredients

1 1/2 pounds beef round, sliced into thin strips
4 tablespoons all-purpose flour
2 tablespoons butter, divided
1 medium onion, finely diced
1/2 pound mushrooms, thinly sliced
10 oz can beef broth
1/2 cup water
1/2 teaspoon salt
8 oz container sour cream


Instructions

Toss the beef strips in flour until they are evenly coated.
Melt 1 tablespoon of butter in a large skillet over medium-high heat.
Add the beef strips to the skillet and sear until browned on all sides, then remove from the pan and set aside.
In the same skillet, melt the remaining butter and add the onions and mushrooms.
Sauté until the onions are translucent and the mushrooms are browned and tender.
Pour in the beef broth and water, stirring to scrape up any browned bits from the bottom of the pan.
Return the beef to the skillet and simmer for a few minutes until the sauce thickens.
Remove from heat and stir in the sour cream until smooth and creamy.

Notes

Serve over cooked egg noodles or steamed rice for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 3 days.
