These delightful apple hand pies offer the cozy, warm flavors of a classic orchard harvest in a convenient, portable format. Featuring a perfectly flaky puff pastry shell and a rich, spiced apple filling, these treats are simple to assemble and impossible to resist. They are an ideal crowd-pleasing dessert for any autumn gathering or a quick treat to keep in the freezer for when a sweet craving strikes.


Ingredients

3-4 apples (Honeycrisp or Granny Smith), cubed
1/2 cup brown sugar
1/4 cup vegan butter
1 tsp ground cinnamon
4 tsp cornstarch
2 tbsp water (for slurry)
2 sheets puff pastry, thawed
1 tbsp maple syrup (for brushing)


Instructions

Preheat your oven to 200°C (390°F) and line baking trays with parchment paper.
Combine cubed apples, brown sugar, vegan butter, cinnamon, and lemon juice in a large saucepan over high heat.
Reduce heat to medium once butter melts and cook for 10 minutes until apples soften.
Whisk cornstarch and 2 tbsp water in a small bowl, then stir into the apple mixture.
Cook for another 5-10 minutes until the filling thickens, then set aside to cool completely.
Cut puff pastry sheets into even rectangles.
Place two tablespoons of cooled apple filling in the center of half the rectangles.
Brush edges with maple syrup, place remaining pastry pieces on top, and crimp the edges with a fork to seal.
Cut small slits on top of each pie for steam ventilation.
Brush the tops with additional maple syrup and bake until golden brown.

Notes

Ensure the apple filling is completely cooled before assembly to prevent the pastry from becoming soggy. You can store these in an airtight container in the freezer for up to one month and reheat in an oven.
