Description

Indulge in the perfect harmony of warm, spiced Granny Smith apples and smooth, creamy vanilla cheesecake. These decadent bars feature a buttery graham cracker base, a rich cheesecake middle, and a crunchy, cinnamon-spiced streusel topping that delivers bakery-quality results right from your home oven. They are the ultimate handheld comfort dessert, ideal for potlucks, fall gatherings, or a cozy afternoon treat.

Ingredients

1/4 cup butter, melted
1 cup graham cracker crumbs (or crust mix)
16 oz cream cheese, softened
1 package cheesecake filling mix
2 large eggs
3-4 medium Granny Smith apples, peeled and chopped
2 tbsp granulated sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1/3 cup rolled oats
3/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 cup pecans, chopped
6 tbsp cold butter, cubed

Instructions

Preheat oven to 325F and line a 9-inch square baking pan with parchment paper.
Combine melted butter and graham cracker crumbs, press into the pan, and bake for 14 minutes.
Beat cream cheese and cheesecake mix until smooth, then add eggs one at a time.
Pour the cheesecake layer over the warm crust.
Toss chopped apples with 2 tbsp sugar, 1/2 tsp cinnamon, and 1/4 tsp nutmeg, then scatter over the cheesecake.
Mix the flour, sugars, oats, spices, salt, and pecans in a bowl, then cut in the cold butter until crumbly.
Sprinkle the streusel mixture over the apples.
Bake for 35 minutes until the center is set.
Cool completely and refrigerate for 3 hours before slicing.

Notes

Ensure all refrigerated ingredients like cream cheese and eggs are at room temperature to ensure a smooth cheesecake layer. Lining the pan with parchment paper makes clean removal and slicing much easier. Store leftovers in an airtight container in the refrigerator for up to 3 days.
