Ingredients
12 oz Biscoff spread
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup light brown sugar, packed
2 large eggs
1 tsp pure vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 cup white chocolate chips (non-alcoholic if required)
Instructions
Preheat oven to 350°F (180°C). Line an 8×8 inch baking pan with parchment paper.
In a large bowl, whisk together flour, baking powder, and salt.
In another bowl, cream butter, granulated sugar, and brown sugar until smooth.
Beat in eggs and vanilla extract until fully incorporated.
Fold in half the flour mixture, then mix in half the Biscoff spread.
Press the dough evenly into the prepared pan, creating a base layer.
Spread remaining Biscoff over the dough, and dot with white chocolate chips.
Sprinkle with remaining flour mixture to coat the top.
Bake for 22-26 minutes until the top is golden and a toothpick comes out clean.
Cool completely before cutting into 16 bars.
Notes
Use high-quality Biscoff spread for best spiced flavor.
To make gluten-free, substitute all-purpose flour with a 1:1 gluten-free blend plus 1 tsp xanthan gum.
Bars stay fresh for up to 5 days if stored airtight.
For a vegan version, replace butter and eggs with vegan substitutes and omit vanilla if alcohol is a concern.
