This classic recipe uses a Moka pot to create a rich, dark brew that is whisked with brown sugar into a velvety, golden-brown cream known as espumita. Ingredients

3 tbsp Cuban espresso coffee (finely ground)
3 tbsp brown sugar
9 oz filtered water


Instructions

Fill the bottom chamber of your Moka pot with water up to the safety valve.
Fill the coffee basket with finely ground espresso and level it gently.
Assemble the Moka pot and place it on the stove over high heat.
Wait for the first few drops of dark espresso to emerge.
In a small heat-safe pitcher, combine the sugar with a scant teaspoon of the initial coffee drops.
Vigorously whisk the sugar and coffee mixture until it forms a thick, light-colored paste.
Once the Moka pot finishes brewing, pour the remaining hot coffee into the pitcher with the paste.
Stir gently to combine and distribute the creamy espumita foam on top of each serving.

Notes

Use freshly ground coffee for the best aroma. If you prefer a less sweet beverage, reduce the sugar to 2 tablespoons. White sugar can be substituted for brown sugar if preferred, though brown provides a deeper molasses note.
