Description
Tender ground beef meatballs tossed in a tangy, sweet, and slightly spicy sauce, perfect for busy weeknights. These no-fuss slow-cooked meatballs bring smiles to all ages with minimal effort and maximum flavor.
Ingredients
1 pound ground beef
1/2 cup breadcrumbs
1 large egg
1/4 cup milk
1 small onion, grated
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon black pepper
2 cups ketchup
1/4 cup cider vinegar
1/4 cup brown sugar
2 tablespoons soy sauce (or tamari for gluten-free)
1 cup pineapple chunks (or green apples)
2 tablespoons cornstarch
2 tablespoons water
Instructions
Combine ground beef, breadcrumbs, egg, milk, onion, garlic, salt, and pepper in a bowl; mix until well blended.
Form mixture into 1-inch meatballs.
In a separate bowl, mix ketchup, vinegar, brown sugar, and soy sauce.
Add pineapple chunks and meatballs to the slow cooker.
Pour sauce over the meatballs and stir to coat.
Cover and cook on low for 4-6 hours or high for 2-3 hours.
Whisk cornstarch with water to create a slurry and mix into the slow cooker after cooking time. Leave covered an additional 10 minutes.
Serve hot with steamed rice or crusty bread.

Meatballs can be air-fried or pan-fried for added texture if desired
