Description

Experience the ultimate comfort food with this easy-to-make slow cooker soup. It captures all the beloved flavors of traditional Chicken Parmesan—tender chicken, savory tomato sauce, melted cheese, and aromatic Italian herbs—transformed into a hearty, protein-packed meal. Perfect for busy weeknights, this family-friendly dish saves time by eliminating the breading and frying steps while ensuring a delicious, satisfying result every time.

Ingredients

3 Boneless Chicken Breasts
1 tbsp Minced Garlic
28 oz Crushed Tomatoes
15 oz Tomato Sauce
1 tsp Salt
1 tsp Black Pepper
2 tsp Italian Seasoning
4 cups Chicken Broth
1 cup Parmesan Cheese
1 cup Heavy Whipping Cream
8 oz Rotini Pasta
0.5 cup Bread Crumbs
1 tbsp Butter
1.5 cups Shredded Mozzarella

Instructions

Place the chicken breasts, garlic, crushed tomatoes, tomato sauce, salt, pepper, and Italian seasoning into the slow cooker.
Pour in the chicken broth and stir to combine.
Cover and cook on low for 7 hours.
Once the chicken is tender, remove it from the pot, shred it using two forks, and return it to the slow cooker.
Stir in the heavy whipping cream, parmesan cheese, and rotini pasta.
Cook on high for an additional 20-30 minutes until the pasta is al dente.
In a separate small pan, toast the bread crumbs in butter until golden brown.
Ladle the soup into bowls, top with shredded mozzarella and the toasted bread crumbs before serving.

Notes

Substitute chicken breasts with chicken thighs for extra flavor and tenderness. Use low-sodium chicken broth to better manage the salt content of the dish. Leftovers can be stored in an airtight container for up to 3 days and often taste better as the flavors meld.
