Description

A one-pot slow cooker meal combining tender chicken, savory veggies, and fluffy rice—all ready when you are. Perfect for busy weeknights with kid-approved flavor and minimal cleanup.

Ingredients

1 cup uncooked jasmine rice
1.5 lbs boneless, skinless chicken breast (pre-cooked and cubed)
1 bell pepper (diced)
1 cup carrots (diced)
1/2 cup corn kernels (frozen)
2 cloves garlic (minced)
1 tbsp grated ginger
1/4 cup low-sodium soy sauce
1 tsp sesame oil (optional)
1 tbsp vegetable oil
2 eggs (lightly beaten)
2 green onions (sliced, for garnish)
1/2 cup water or chicken broth

Instructions

Add rice, chicken, bell pepper, carrots, corn, garlic, ginger, soy sauce, sesame oil, and vegetable oil to the crockpot.
Cook on low for 5-6 hours or high for 2.5-3 hours.
In the last 30 minutes, mix 1 tbsp cornstarch with 2 tbsp water and stir into the crockpot.
Stir in beaten eggs during the last 15 minutes of cooking.
Garnish with green onions before serving.

Notes

Use pre-cooked rice for best results (cooled). Substitute chicken broth for soy sauce if avoiding gluten.
Add frozen peas or zucchini for extra veggies.
Recipe scales well for larger groups—adjust cooking time for larger quantities.
Serve with steamed broccoli for a complete meal.
