Ingredients
2 to 2.5 lbs (900g to 1.1kg) beef stew meat
1 large onion, chopped
2 to 3 cloves garlic, minced
2 cups potatoes, cubed
1 cup carrots, sliced
1 cup celery, sliced
1 packet onion soup mix
2 cups beef or vegetable broth
2 tablespoons tomato paste
1 bay leaf
Olive oil, for browning
Instructions
Heat olive oil in a skillet. Brown the beef cubes in batches and set aside.
In the crock pot, add chopped onion, minced garlic, cubed potatoes, sliced carrots, and celery.
Mix in browned beef, broth, tomato paste, and bay leaf. Stir in onion soup mix according to package instructions.
Add water to submerge ingredients if needed. Cook on low for 7 to 8 hours.
Adjust seasonings before serving. Optional: Thicken with a slurry of flour and water if preferred.
