Transform lean ground chicken into a delicious, crispy-on-the-outside, juicy-on-the-inside meal that your whole family will love. These healthy burgers are packed with hidden carrots and protein-rich seeds, then coated in crushed cornflakes for that satisfying crunch you crave, all without needing deep frying.
Ingredients
1/2 onion, yellow or white
1 lb ground chicken
1/4 cup fresh parsley, chopped
1/2 cup oat flour
1 large egg
1 carrot, peeled and finely chopped
1 tbsp chia seeds
1 tbsp flax seeds
1 tbsp salt
3/4 cup cornflakes, crushed
1 tsp paprika
1 tsp garlic powder
Instructions
Blend the onions, parsley, egg, and carrots in a food processor until finely minced.
Transfer the mixture to a large bowl and combine with the ground chicken, oat flour, chia seeds, flax seeds, salt, paprika, and garlic powder.
Shape the mixture into 4 equal-sized patties.
Lightly press each patty into the crushed cornflakes until coated on all sides.
Preheat the air fryer to 375°F (190°C).
Place patties in the air fryer basket in a single layer, ensuring they do not overlap.
Cook for 15 minutes, flipping halfway through, until the patties reach an internal temperature of 165°F and the coating is golden brown.
Notes
Ensure carrots are finely minced so they cook evenly with the chicken. If you prefer, green onions can be used instead of parsley. Leftover burgers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the air fryer for 3-5 minutes to restore crispiness.
