Ingredients

12 oz pasta (rotini or penne)
3 cups cherry tomatoes, halved
4 cloves garlic, minced
1 tsp Italian seasoning
1/3 cup ricotta cheese
2 tbsp extra virgin olive oil
Salt and black pepper to taste
1/2 cup reserved pasta water


Instructions

Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup of starchy pasta water before draining.
Heat olive oil in a wide skillet over medium heat.
Add minced garlic and sauté until fragrant and golden.
Add cherry tomatoes and Italian seasoning to the skillet.
Cook over medium heat, using a wooden spoon to gently burst the tomatoes until they soften into a sauce.
Stir in the ricotta cheese until smooth and well combined with the tomato mixture.
Add the cooked pasta to the skillet, tossing to coat. Add reserved pasta water as needed to reach the desired consistency.
Season with salt and pepper to taste and serve warm.

Notes
