Ingredients

8 ounces penne pasta
1 head fresh broccoli, chopped into bite-sized florets
2 fillets cooked salmon, flaked into chunky pieces
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Dijon mustard
Salt and pepper to taste
1 tablespoon fresh lemon juice
Optional: 1/4 teaspoon red pepper flakes for a subtle kick


Instructions

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta water before draining.
While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute until fragrant.
Add the broccoli florets to the skillet. Cook for 3-4 minutes until just tender-crisp but still vibrant green.
Stir in the flaked salmon and gently toss with the broccoli and garlic to warm it through.
Pour the heavy cream into the skillet, reduce the heat to medium-low, and simmer for 3-4 minutes, allowing the flavors to meld.
Stir in the Parmesan cheese, Dijon mustard, and lemon juice. Season with salt and pepper to taste. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
Add the cooked pasta to the skillet and toss everything together, ensuring each piece is coated in the creamy sauce.
Serve warm, optionally sprinkled with additional Parmesan and fresh herbs if desired.

Notes

You can use frozen broccoli; just thaw it beforehand and pat it dry to prevent the sauce from becoming too watery.
If making it gluten-free, substitute the pasta with certified gluten-free penne or another pasta shape you prefer.
Leftover can be stored in an airtight container in the refrigerator for up to 2 days.
