Description
Comfy chicken rice bowls with tender chicken, fragrance garlic sauce, and fluffed rice. Creamy and satisfying without pork or alcohol.
Ingredients
2 tablespoons olive oil
1.5 lbs boneless skinless chicken breasts (bite-sized)
1 teaspoon salt
1/2 teaspoon black pepper
3 cloves garlic (minced)
2 cups uncooked rice
2 cups frozen broccoli (steamed until tender)
1 (10oz) can cream of mushroom soup (undiluted)
1/2 cup heavy cream
1/2 cup chicken broth
1/4 cup grated cheddar cheese
1/2 teaspoon paprika
1 tablespoon lemon juice
Instructions
Heat oil in skillet. Sauté garlic 1-2 min
Season chicken with salt/pepper. Cook chicken 5-7 min until browned
Add rice, chicken broth. Simmer 15 min
Make sauce: mix soup, cream, paprika
Stir sauce into rice-chicken mixture
Add broccoli, lemon juice and cheese
Simmer 3-5 min until thickened
Serve in bowls with rice toppings
Notes
Use vegetable oil substitute
Frozen chicken works (thaw first)
Add protein: chickpeas or halal meat
Swap broccoli with any veggies
Use vegan cream alternative
Garnish with parsley or sesame seeds
