Ingredients
8 oz cream cheese, softened
1 cup cheddar cheese, shredded
4 whole jalapeños, seeded and finely diced
1/2 cup beef bacon bits, crisped and chopped
1 tsp garlic powder
1 tsp onion powder
12 egg roll wrappers
Vegetable oil for frying
Salt and black pepper to taste
Water for sealing
Instructions
In a large mixing bowl, combine the softened cream cheese, shredded cheddar, diced jalapeños, and crispy beef bacon bits.
Stir in the garlic powder, onion powder, salt, and pepper until the mixture is smooth and thoroughly combined.
Place one egg roll wrapper in a diamond orientation on a clean surface.
Add 1.5 tablespoons of filling to the center of the wrapper.
Fold the bottom corner up over the filling, tucking it snugly.
Fold in the two side corners toward the middle.
Roll the wrapper tightly toward the top corner and seal the edge with a light brush of water.
Heat two inches of vegetable oil in a deep skillet or heavy pot to approximately 350°F.
Fry the egg rolls in batches until they are golden brown and crispy, rotating occasionally.
Remove with a slotted spoon and drain on paper towels before serving.
Notes
Ensure the cream cheese is fully softened for a smoother filling. For an even crispier texture, ensure the oil temperature stays consistent. These can be pre-assembled and frozen for up to a month; thaw slightly before frying.
