Ingredients

1.5 pounds ground beef
4 medium russet potatoes (peeled and cubed)
16 ounces frozen peas
1 medium onion (chopped)
3 cloves garlic (minced)
2 tablespoons tomato paste
1 cup beef broth
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/4 teaspoon salt
3/4 cup all-purpose flour
4 tablespoons melted butter
1/2 cup sour cream (optional topping)


Instructions

Preheat oven to 375°F (190°C)
In a large skillet, cook ground beef over medium heat until browned and drained
Add onion and garlic; sauté until tender
Stir in tomato paste, beef broth, oregano, thyme, pepper, and salt
Bring to a boil, then simmer for 5 minutes
In a separate pot, boil potatoes until tender (about 10 minutes), then drain
In a 9×13-inch baking dish, layer cooked beef mixture, potatoes, and peas
Mix sour cream into flour and butter until crumbly; sprinkle over casserole
Bake for 30-35 minutes or until golden and bubbly

Notes

Use fresh thyme instead of dried for brighter flavor
