4 tbsp Butter
1 tbsp Olive oil
3 lbs Yellow onions, thinly sliced
3/4 tsp Kosher salt
1/4 tsp Black pepper
3/4 cup White grape juice
1 tbsp Apple cider vinegar
2 tbsp All-purpose flour
8 cups Beef broth
1 Bay leaf
2 sprigs Fresh thyme
1/2 tsp Worcestershire sauce
1 loaf Baguette, sliced into half-inch rounds
6 oz Gruyère cheese, grated


Instructions

Heat the butter and oil in a large Dutch oven over medium heat.
Add the sliced onions, salt, and pepper, stirring well.
Cook the onions uncovered for 45 to 55 minutes until deep golden brown, deglazing with a splash of water if needed.
Stir in the flour and cook for 1 to 2 minutes.
Pour in the white grape juice and vinegar, scraping the bottom of the pot to release browned bits.
Add the beef broth, bay leaf, and thyme, then bring to a simmer.
Cover and cook for 20 minutes, then stir in the Worcestershire sauce.
Preheat your broiler.
Ladle soup into oven-safe bowls, top with toasted baguette slices and a generous amount of Gruyère.
Broil until the cheese is melted, bubbly, and golden.
