Ingredients

16 slices white bread
1 cup (8 oz) cream cheese, softened
1/4 cup finely chopped fresh dill or chives
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 small English cucumber, thinly sliced
Salt to taste
Fresh thyme sprigs for garnish (optional)


Instructions

Prep work: Cut cucumber into thin rounds. Toss with a teaspoon of salt in a colander; drain for 15-30 minutes.
In a small bowl, mix cream cheese with dill (or chives), lemon juice, and zest until smooth.
Toast bread lightly if desired.
Assemble by spreading herbed cream cheese on two slices per sandwich. Layer drained cucumber slices (discarding excess liquid) and top with second bread slice.
Serve chilled or at room temperature, garnished with thyme if desired.
