Ingredients

2 cups old-fashioned oatmeal
2 cups quick-cooking oatmeal
1/2 cup whole wheat flour
1/4 cup ground flaxseed
1 teaspoon cinnamon
1/2 teaspoon kosher salt
1/2 cup whole almonds
1/2 cup slivered almonds
1/2 cup sunflower seeds
1/2 cup walnut pieces
3/4 cup large coconut flakes, divided
1 cup dried cranberries, divided
1/2 cup coconut oil
1 cup honey, divided
1/2 cup brown sugar
1 teaspoon vanilla
1/4 cup water


Instructions

Preheat your oven to 350°F (175°C) and line a large rimmed baking sheet with parchment paper.
In a large bowl, whisk together the old-fashioned oats, quick-cooking oats, whole wheat flour, flaxseed, cinnamon, and salt.
Add the almonds, sunflower seeds, walnut pieces, and half of the coconut flakes to the oat mixture.
In a small saucepan over medium heat, combine the coconut oil, half the honey, brown sugar, vanilla, and water until melted and smooth.
Pour the wet mixture over the dry ingredients and stir until thoroughly coated.
Spread the mixture onto the baking sheet and press down firmly with a spatula to create a compact layer for better chunk formation.
Bake for 45 minutes, stirring only once at the halfway mark and pressing down firmly again.
Remove from the oven, drizzle with remaining honey, and let cool completely without stirring to allow chunks to set.
Once cooled, stir in the remaining coconut flakes and dried cranberries.

Notes

Store in an airtight container at room temperature for up to two weeks.
For extra-large clusters, avoid breaking the granola too much after baking; let it cool completely undisturbed.
