Ingredients
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon sea salt
1/3 cup vegetable oil
1 large egg
2 cups grated zucchini (about 1 small zucchini)
1 teaspoon vanilla extract
1/4 cup chocolate chips
Instructions
Preheat oven to 350°F (175°C)
Grease a 9×5 inch loaf pan
In a bowl, whisk together flour, sugar, cocoa, baking soda, and salt
In another bowl, mix oil, egg, zucchini, and vanilla
Combine wet and dry ingredients until just incorporated
Fold in chocolate chips
Pour batter into prepared pan
Bake 50-60 minutes until a toothpick comes out clean
