Ingredients

1 lb Chicken Breast, boneless and skinless
8 cups Chicken Broth, low sodium
1 cup Carrots, diced
1 cup Celery, thinly sliced
1 cup Onion, finely chopped
1 cup Potatoes, peeled and diced
0.5 cup Frozen Peas
1 tsp Dried Thyme
1 tsp Dried Rosemary
1 tsp Salt
0.5 tsp Black Pepper


Instructions

In a large heavy-bottomed pot, combine the chicken broth, diced carrots, celery, onion, and potatoes.
Add the chicken breast whole to the pot along with the dried thyme, rosemary, salt, and pepper.
Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer for 25-30 minutes until the vegetables are tender and chicken is cooked through.
Remove the chicken breast carefully, shred it into bite-sized pieces using two forks, and return it to the pot.
