Ingredients
1 lb Ground chicken
1 cup Cheddar cheese, finely shredded
1/4 cup Parmesan cheese, grated
2 Eggs, divided
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/2 tsp Sea salt
1/4 tsp Black pepper
1 cup Panko breadcrumbs
1/2 cup Parmesan cheese, grated for breading
Instructions
Preheat your oven to 400 degrees F and line a large baking sheet with parchment paper.
Combine the ground chicken, shredded cheddar, 1/4 cup parmesan, one egg, garlic powder, onion powder, salt, and pepper in a large bowl.
Mix the ingredients thoroughly until uniform.
In a shallow plate, whisk the remaining egg to create an egg wash.
On a separate plate, mix the panko breadcrumbs with the remaining 1/2 cup of parmesan cheese.
Scoop small portions of the chicken mixture and shape them into nugget shapes.
Dip each nugget into the egg wash, then coat evenly with the panko-parmesan mixture.
Place the nuggets on the prepared baking sheet.
Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through.
