Ingredients
4 boneless, skinless chicken breasts
12 oz penne pasta
4 cups chopped romaine lettuce
1/2 cup Caesar dressing
3 tbsp grated Parmesan
1 tbsp Dijon mustard
1 tbsp fresh lemon juice
1 tbsp olive oil
1 clove garlic
1 tsp salt
1/2 tsp black pepper
1/4 cup chopped fresh parsley
Instructions
Preheat oven to 400°F. Season chicken with salt, pepper, and garlic.
Cook pasta according to package instructions, drain, and set aside.
Whisk together Caesar dressing, Dijon mustard, lemon juice, and parsley.
Heat olive oil in a skillet, sear chicken until cooked through (5-6 minutes per side), let rest, then slice.
Toss cooked pasta with romaine and dressing mixture.
Add sliced chicken, Parmesan, and toss to combine. Serve warm.
Notes
