Ingredients

2 cups cooked white rice
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 cup black beans, rinsed and drained
1 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp paprika
1 avocado, sliced
1/2 cup shredded cheddar cheese
1/2 cup diced red onion
1/2 cup chopped fresh cilantro
1 cup shredded lettuce
1/2 cup salsa or pico de gallo


Instructions

In a small bowl, mix the chili powder, cumin, garlic powder, and paprika together to create the spice rub.
Pat the chicken breasts dry and coat them evenly with the prepared spice rub.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and cook for 6-7 minutes per side, or until golden brown and cooked through.
Remove the chicken from the skillet and let it rest for 5 minutes before slicing it into strips or bite-sized cubes.
Divide the cooked rice into four serving bowls.
Top each bowl with the cooked chicken, black beans, shredded lettuce, diced onion, and avocado.
Sprinkle with shredded cheddar cheese and fresh cilantro.
Finish with a generous scoop of salsa or pico de gallo and serve immediately.

Notes

Store the components in separate airtight containers in the refrigerator for up to 3 days. To keep avocado from browning, store it separately and slice just before serving. Feel free to add corn, sour cream, or hot sauce to customize your bowls.
