Ingredients
4 large apples (Granny Smith or Honeycrisp)
8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp pure vanilla extract
1/2 cup graham cracker crumbs
1 tsp ground cinnamon
Instructions
Preheat your oven to 350°F (175°C).
Wash the apples and cut off the tops, saving them for later.
Using a melon baller or paring knife, carefully scoop out the core, leaving a thick wall of apple to hold the filling.
In a medium bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
Stir in half of the graham cracker crumbs.
Spoon the cream cheese mixture into the hollowed-out centers of the apples.
Sprinkle the remaining graham cracker crumbs and cinnamon over the tops.
Place the apples in a baking dish and bake for 30 minutes until the apples are tender.
Remove from the oven, let cool slightly, and serve warm.
Notes
Ensure cream cheese is at room temperature for the smoothest filling texture.
For a garnish, drizzle with a little honey or top with chopped walnuts.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
