Description
Sweet caramelized onions, spicy chili oil, and tender pasta come together in this comforting and flavorful weeknight dinner.
Ingredients
12 oz pasta
2 tbsp olive oil
3 tbsp olive oil
1 large yellow onion, thinly sliced
3 cloves garlic, minced
1 small garlic clove, thinly sliced
Salt, to taste
Black pepper, to taste
1 tbsp red chili flakes
1 tsp paprika
1 tsp soy sauce
1/2 cup grated Parmesan cheese
Fresh basil or parsley, chopped
Instructions
1.Cook pasta until al dente and reserve pasta water.
2.Caramelize onions in olive oil until deep golden.
3.Add minced garlic and cook briefly.
4.Make chili oil with olive oil, garlic, chili flakes, paprika, and soy sauce.
5.Drain pasta and combine with caramelized onions.
6.Toss with chili oil and a splash of reserved pasta water.
7.Top with Parmesan and fresh herbs.
8.Serve immediately.
Notes
Caramelized onions can be made ahead.
Adjust chili flakes to preferred spice level.
Add chicken, shrimp, or mushrooms for variation.
Store leftovers in the refrigerator up to 3 days.
