A gourmet twist on the classic grilled cheese, combining golden sourdough toast with gooey cheddar, creamy brie, sweet onions, and crisp apple for a symphony of flavors. Effortless, comforting, and restaurant-worthy.
Ingredients
4 slices sourdough bread
6 tbsp unsalted butter, divided
1 1/2 cups thinly sliced yellow onion (about 2 onions)
1/2 apple, thinly sliced (Granny Smith or Honeycrisp recommended)
1 cup shredded sharp cheddar cheese
4 oz sliced brie
1 tsp brown sugar (optional)
Fresh thyme leaves (optional)
Instructions
In a large skillet, melt 4 tbsp butter over medium heat. Sauté onions for 20-25 minutes until golden brown, stirring occasionally. Add 1 tsp brown sugar to enhance caramelization.
In the same skillet, add 2 tbsp butter in a separate batch, then cook apple slices for 5 minutes until just softened. Toss with thyme leaves.
On 2 slices of sourdough, place cheddar and brie layers. Top with caramelized onions and apples, then seal with the remaining bread.
Heat 1 tbsp butter in a nonstick pan over medium. Cook sandwiches 3-4 minutes per side until golden browned and crisp.
Let rest 2-3 minutes before serving.
Notes
Use any sturdy bread; focaccia or ciabatta work well too
Add caramelized onions and apple to a panini press for a crispy variation
