Description

Candied jalapeños, affectionately known as Cowboy Candy, are a perfect blend of sweet and spicy. These crisp, sugar-glazed pepper rings add a gourmet touch to grilled chicken, burgers, or sandwiches. Simple to prepare, these shelf-stable treats are an essential pantry staple that transforms basic meals into flavorful experiences that even the heat-averse can enjoy.


Ingredients

1 pound fresh jalapeño peppers (16-18 small to medium peppers)
1 1/2 cups granulated sugar
1/2 cup apple cider vinegar
1/2 teaspoon garlic powder
1/2 teaspoon ground turmeric
1/2 teaspoon mustard seeds


Instructions

Wash and dry your glass jar thoroughly.
Rinse the jalapeños well and trim off the stems.
Put on gloves to protect your skin and slice the peppers into uniform 1/4-inch rings.
In a medium saucepan, combine the sugar, apple cider vinegar, garlic powder, turmeric, and mustard seeds.
Bring the mixture to a slow boil, then reduce heat and simmer for 5 minutes.
Add the sliced jalapeños to the syrup and simmer for an additional 4 minutes.
Pack the peppers into the clean jar using a slotted spoon, then pour the syrup over them, leaving a little headspace.
Seal and allow to cool before refrigerating.

Notes

Always wear gloves when handling hot peppers to avoid skin and eye irritation. These keep very well in the refrigerator for several weeks. Excellent for gifting.
