Instructions
Preheat oven to 350°F (180°C)
Combine butter, brown sugar, and granulated sugar in a mixer until creamy
Beat in eggs one at a time, then stir in vanilla extract
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon
Gradually add dry ingredients to wet mixture until combined
Chill dough for 30 minutes
Portion dough into 1-inch balls
Mix coating sugar and cinnamon in a small bowl
Roll dough balls in coating mixture
Place 2 inches apart on parchment-lined baking sheets
Bake for 10-12 minutes until golden around edges
