Description

Ingredients

1 cup butter, softened

1 3/4 cups packed brown sugar

2 large eggs

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking powder

1/4 tsp salt

1 1/2 cups finely grated zucchini, drained

1 1/2 cups butterscotch morsels


Instructions

1. Preheat oven to 350°F (175°C).

2. Cream butter and brown sugar until fluffy.

3. Beat in eggs and vanilla.

4. Mix flour, baking powder, and salt.

5. Fold dry ingredients into wet mixture.

6. Stir in zucchini and 1 cup butterscotch morsels.

7. Spread into a greased 9×13-inch pan and top with remaining morsels.

8. Bake 40–45 minutes.

9. Cool completely before cutting into bars.

Notes

Drain the zucchini well before adding it.

Do not overmix the batter.

Store in an airtight container for up to 4 days.

Freeze for up to 3 months.
