Description
Soft and chewy brown sugar cookies bursting with tangy rhubarb and warm cinnamon flavor.
Ingredients
1 cup light brown sugar
1/2 cup butter, softened
1 tsp vanilla extract
1 large egg
1 3/4 cups all-purpose flour
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 cup finely diced rhubarb
Instructions
1. Preheat oven to 375°F (190°C).
2. Beat butter, brown sugar, vanilla, and egg.
3. Mix in flour, cinnamon, salt, baking soda, and baking powder.
4. Fold in diced rhubarb.
5. Scoop dough onto baking sheet.
6. Bake 12–14 minutes until lightly golden.
7. Cool slightly and serve.
Notes
Use fresh rhubarb for best texture.
Chill dough for thicker cookies.
Store in airtight container up to 4 days.
Freeze baked cookies up to 3 months.
