Description
Transform fresh pineapple into a warm, caramelized dessert with this simple grilled recipe. By macerating fresh fruit in a mixture of light brown sugar, a hint of spicy cayenne, and aromatic vanilla, you create a perfect balance of smoky, sweet, and tangy flavors. It is a light, healthy, and sophisticated treat that finishes any meal with a delightful textural crunch from the seared edges.
Ingredients
1 whole fresh pineapple, peeled and cored
1/4 cup light brown sugar
1/4 tsp cayenne pepper
1 tsp pure vanilla extract
1/8 tsp kosher salt
Vegetable oil spray, as needed
Instructions
Slice the pineapple into long, even spears.
In a large bowl, combine the brown sugar, cayenne, vanilla, and salt.
Add the pineapple spears to the bowl and toss until evenly coated.
Cover and let sit at room temperature for 30 minutes to marinate.
Preheat an indoor grill pan over high heat and lightly coat with vegetable oil spray.
Place pineapple in a single layer and grill for 1-2 minutes per side until charred and tender.
Notes
Ensure the grill pan is very hot before adding the pineapple to achieve proper caramelization. Dark brown sugar can be substituted for a deeper molasses flavor. Serve immediately while warm, perhaps with a side of vanilla yogurt or dairy-free coconut ice cream.
