Description

A vibrant and flavorful pasta salad made with tender bow tie pasta, fresh vegetables, tender mozzarella, and a zesty pesto dressing. Perfect for weeknights or outdoor gatherings, this Italian-American dish is colorful, satisfying, and always a crowd-pleaser.

Ingredients

12 oz bow tie pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup bell peppers (any color), diced
1 cup red onion, finely chopped
10 oz fresh mozzarella balls
1/4 cup extra virgin olive oil
2 tablespoons fresh basil, chopped
2 tablespoons lemon juice
Salt and pepper to taste

Instructions

Bring a large pot of salted water to a boil. Cook the bow tie pasta until al dente, about 8-10 minutes. Drain and let cool.
In a large bowl, combine cooked pasta, cherry tomatoes, diced cucumber, bell peppers, red onion, and mozzarella.
In a separate small bowl, whisk together olive oil, fresh basil, and lemon juice to make the dressing.
Pour the dressing over the salad and toss until everything is evenly coated. Season with salt and pepper to taste.
Chill for 15-20 minutes before serving to let the flavors meld. Serve cold or at room temperature.

Notes

Use fresh, high-quality mozzarella and basil for the best flavor. This dish can be prepared ahead of time and stored in the refrigerator for up to 24 hours.
Adjust the amount of lemon juice to your taste for a tangier or milder flavor.
For added protein, you can include grilled or baked chicken.
