Description

Elevate your baking with this vibrant, velvety blueberry frosting. This natural topping uses a homemade fruit reduction to achieve a deep, concentrated berry flavor that brings a refreshing, sophisticated touch to cakes, cupcakes, and cookies. Free from artificial colors, it is a perfect, clean-tasting alternative to standard vanilla buttercream that kids and adults will adore.

Ingredients

1 1/2 cups Blueberries (fresh or frozen)
1 tablespoon Sugar
1 tablespoon Lemon juice
1 cup Unsalted butter (room temperature)
4 cups Powdered sugar (sifted)

Instructions

Combine blueberries, sugar, and lemon juice in a saucepan over medium-low heat.
Cook for 5 minutes until berries break down.
Strain the mixture through a fine mesh strainer into a bowl to collect the liquid.
Return the juice to the pan and reduce over medium-low heat for 5-10 minutes until volume is halved.
Allow the reduction to cool completely to room temperature.
Beat the softened butter and sifted powdered sugar in a stand mixer until smooth and fluffy.
Gradually add the cooled blueberry reduction to the mixer on low speed.
Continue mixing until the frosting achieves a consistent color and velvety texture.

Notes

Ensure the blueberry reduction is completely cool before adding it to the butter to prevent the frosting from melting or separating. Store the frosting in a covered container in the refrigerator for up to 3 days. If it becomes too firm, let it sit at room temperature for a few minutes before whipping again.
