Ingredients
6 large flour tortillas
2 skinless chicken thighs
1/2 cup barbecue sauce
1/3 cup hot honey
1 cup shredded cheddar cheese
2 tablespoons unsalted butter
1/4 cup chopped fresh cilantro
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon onion powder
Instructions
Preheat Blackstone griddle to medium-high heat
Season chicken thighs with garlic powder, onion powder, and smoked paprika
Grill chicken until fully cooked, let rest then shred or cube
Combine shredded chicken with barbecue sauce and hot honey, mix well
Spread 1/3 to 1/2 cup cheese onto each tortilla, layer with chicken filling and scatter cilantro
Top with remaining tortillas to form quesadillas
Melt butter on the griddle, cook one side until golden and crispy, about 2-3 minutes
Flip and repeat on the other side, serving warm with optional lime or guacamole
Notes
For non-griddle cooking, use a large skillet or indoor griddle
Bacon can be replaced with smoked turkey ham or omitted altogether
