Ingredients
2-5 lb Chicken thighs (boneless, skinless)
3/4 cup Soy sauce (low-sodium)
1/2 cup Ketchup
1/4 cup Brown sugar
2 tbsp Minced garlic
1 tbsp Ground ginger
1/4 cup Pineapple juice
2 tbsp Apple cider vinegar
1 tbsp Cornstarch
1/4 tsp Black pepper
Instructions
Whisk soy sauce, ketchup, brown sugar, garlic, ginger, pineapple juice, vinegar, and cornstarch in a bowl.
Add chicken, coat well, and refrigerate for 4-6 hours.
Preheat grill to medium heat (375°F). Remove chicken from marinade, discarding excess.
Grill uncovered for 15 minutes or until fully cooked, brushing frequently with extra marinade.
For extra caramelization, switch to broil mode for 2-3 minutes at end.
Notes
Use bone-in, skin-on thighs for crispy skins (adjust cook time as needed)
Marinate up to 24 hours for deeper flavor
