Description

A vibrant, refreshing caprese pasta salad featuring mozzarella, tomatoes, fresh basil, and a zesty balsamic dressing. Perfect for summer gatherings or quick weeknight meals.


Ingredients

8 oz rotini or penne pasta
1 cup fresh mozzarella, cubed
1 pint cherry tomatoes, halved
1/2 cup fresh basil, chopped
1/4 cup olive oil
2 tbsp balsamic vinegar
1 tsp salt
1/2 tsp black pepper
1/4 cup grated Parmesan (optional)
2 cloves garlic, minced


Instructions

Cook pasta according to package instructions until al dente. Rinse and cool
In a large bowl, combine cooled pasta, mozzarella, cherry tomatoes, and basil
In a small bowl, whisk olive oil, balsamic vinegar, salt, pepper, and garlic
Pour dressing over the salad and toss until evenly coated
Chill for at least 30 minutes before serving
Sprinkle with Parmesan if desired before serving

Notes

Add grilled chicken or shrimp to make it a main dish
For a vegan version, substitute mozzarella with firm tofu
