Ingredients
2 lbs beef chuck roast, trimmed and cubed
1 large onion, diced
3 cloves garlic, minced
4 cups rich beef broth
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
1 tablespoon cornstarch (optional)
12 oz extra-wide egg noodles
Salt and black pepper to taste
Instructions
Trim excess fat from the beef chuck roast and cut into 2-3 inch chunks.
Sear the beef chunks in a skillet over medium heat until deeply browned on all sides.
Place the seared beef into the slow cooker.
Add diced onions and minced garlic over the meat.
Pour in the beef broth and Worcestershire sauce.
Season with dried thyme, salt, and black pepper.
Cover and cook on low for 8 hours until the beef is fork-tender.
Cook the egg noodles separately according to package directions.
