3/4 cup Mozzarella, shredded
1/2 Red onion, thinly sliced
Fresh cilantro, chopped to taste
Dash of Extra virgin olive oil
Instructions
Preheat your oven according to the pizza crust package instructions.
Toss the shredded chicken in a bowl with 2 tablespoons of barbecue sauce and season with salt and pepper to taste.
Lightly brush the pizza crust with olive oil and place it on a greased baking sheet.
Spread the remaining barbecue sauce evenly over the crust, leaving a small border for the crust edge.
Distribute the BBQ-coated chicken over the sauce.
Top with the shredded smoked gouda and mozzarella cheese.
Add the thinly sliced red onion over the cheese.
Bake as directed on the crust packaging until the crust is golden and the cheese is bubbly and slightly browned.
Remove from the oven, sprinkle with fresh cilantro, slice, and serve immediately.
Notes
Ensure your BBQ sauce is thick so the pizza doesn’t become soggy. You can add extra toppings like bell peppers or corn if desired. Store leftovers in an airtight container in the refrigerator for up to 2 days.
