Ingredients

3 large ripe bananas, mashed
2/3 cup creamy peanut butter
3 tbsp pure maple syrup
1 tsp pure vanilla extract
2 cups rolled oats
1/4 tsp sea salt
1 tsp ground cinnamon
1 cup chocolate chips (optional)


Instructions

Preheat your oven to 350 degrees Fahrenheit.
Line an 8×8 inch baking dish with parchment paper.
In a large bowl, mash the ripe bananas thoroughly.
Stir in the peanut butter, maple syrup, and vanilla extract until well combined.
Fold in the rolled oats, sea salt, and ground cinnamon until the mixture is uniform.
Stir in the chocolate chips if using.
Press the mixture firmly and evenly into the prepared baking dish.
Bake for 25 minutes or until the edges are golden brown.
Allow the bars to cool completely in the pan before slicing into 9 squares.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. For a firmer bar, you can keep them chilled. These are freezer-friendly; wrap individual bars in plastic and freeze for up to 3 months.
