Ingredients
2 large chicken breasts, sliced into 4 thin cutlets
1 cup ricotta cheese
1 cup parmesan cheese, grated
3 cloves garlic, minced
1/2 tsp Italian seasoning
2 cups marinara sauce
2 cups mozzarella cheese, shredded
Salt and pepper to taste
Fresh basil for garnish
Instructions
Preheat your oven to 375F.
Cut chicken breasts in half lengthwise to make 4 cutlets.
Season both sides of the chicken with salt and pepper.
In a bowl, mix the ricotta cheese, minced garlic, parmesan, and Italian seasoning.
Spread a thin layer of marinara sauce into the bottom of a casserole dish.
Place chicken cutlets in the dish and top each with the ricotta mixture.
Pour the remaining marinara around the chicken.
Top with mozzarella cheese.
Bake for 35 minutes until the chicken is cooked through and cheese is golden.
Notes
Use whole milk ricotta for the creamiest texture. Freshly grated parmesan melts much better than pre-grated varieties. Serve with a side of steamed vegetables, a fresh salad, or garlic bread to complete the meal.
