Ingredients
500g ground chicken
1 cup panko breadcrumbs
1 large egg
3/4 cup parmesan, finely grated
1 cup green onion, finely sliced
2 garlic cloves, minced
1/2 tsp dried sage
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
4 soft brioche buns
1 large avocado, mashed
60g fresh arugula or lettuce
2 tomatoes, sliced
4 slices Swiss cheese
Mayonnaise, relish, or ketchup for serving
Instructions
Place ground chicken, panko, egg, parmesan, green onion, garlic, sage, salt, and pepper in a large bowl.
Mix by hand until uniform and herbs are evenly distributed.
Divide the mixture into four equal portions and shape into patties 1.5cm thick.
Heat olive oil in a skillet over medium-high heat.
Add patties to the hot pan and sear for 5 minutes per side until golden brown and cooked through.
Top each patty with a slice of Swiss cheese during the last minute of cooking to melt.
Toast the brioche buns lightly.
Spread mashed avocado on the buns, then layer with the cooked chicken patty, tomato slices, and arugula.
Add condiments as desired and serve immediately.
Notes
If the chicken mixture is sticky, lightly dampen your hands with water or oil to shape the patties more easily. For a crunchier texture, ensure the pan is sufficiently hot before adding the chicken.
