Ingredients
5 fresh tomatillos, husked and rinsed
1/4 to 1/2 bunch fresh cilantro, finely chopped
2 cloves of fresh garlic, peeled
1/4 white onion, roughly chopped
1 to 3 jalapeños, to taste
Fine sea salt to taste
1 tablespoon olive oil
Instructions
Heat olive oil in a frying pan over medium-high heat.
Add the tomatillos, onion, and jalapeños to the pan, spreading them out for even cooking.
Sauté for approximately 5 minutes until the onions soften and jalapeños shift in color.
Add the garlic cloves and cook for one additional minute until fragrant.
Continue cooking until the tomatillos appear slightly charred and tender.
Transfer the mixture to a blender and add the fresh cilantro and a generous pinch of salt.
Pulse the mixture until you reach your desired consistency, adding a tablespoon of water if you prefer a thinner sauce.
Notes
Store in an airtight container in the refrigerator for up to one week. Adjust the number of jalapeños to control the heat level. Ensure tomatillos are rinsed well to remove any sticky residue from the husks.
