Ingredients
¼ cup Extra Virgin Olive Oil
Juice of 2 large Lemons (about 6 tbsp)
Zest of 1 Lemon
4 garlic cloves (minced)
1 tsp dried Oregano (or ½ tsp fresh)
½ cup Greek Yogurt
½ tsp salt
¼ tsp black pepper
Instructions
1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, Greek yogurt, salt, and pepper.
2. Add 3 lb boneless chicken breasts or thighs, ensuring all pieces are fully coated.
3. Cover and refrigerate for at least 2 hours (minimum marinating time).
4. Thread onto skewers (optional). Grill over medium heat or bake at 375°F (190°C) for 20-30 minutes, until golden and cooked through.
Notes
For smokier flavor, use a charcoal grill.
Replace Greek yogurt with sour cream for a tangier texture.
Marinate up to 1 day in advance.
