Ingredients

4 boneless, skinless chicken breasts
Salt and pepper, for seasoning
1/2 cup all-purpose flour
2 tablespoons unsalted butter
2 tablespoons olive oil
1 cup non-alcoholic Marsala syrup (or grape juice reduction mixed with a splash of balsamic vinegar)
1/2 cup chicken broth
1/2 cup heavy cream
1/2 cup sliced mushrooms
2 cloves garlic, minced
2 tablespoons shallots, minced
2 tablespoons fresh parsley, chopped


Instructions

Pound the chicken breasts to an even 1/2 inch thickness.
Season the chicken with salt and pepper.
Dredge the chicken in flour and shake off any excess.
In a large skillet, heat 1 tablespoon butter and 1 tablespoon olive oil over medium-high heat.
Sear the chicken until golden brown and cooked through, then remove from the pan and set aside.
In the same skillet, add the remaining butter and oil.
Sauté the mushrooms, shallots, and garlic until tender and fragrant.
Stir in the non-alcoholic Marsala mixture and chicken broth, scraping the bottom of the pan to release any browned bits.
Simmer to reduce the liquid by half.
Stir in the heavy cream and return the chicken to the pan to warm through.
Garnish with fresh parsley before serving.
