Ingredients

4 small tart apples (Granny Smith or Honeycrisp), diced
30g brown sugar
2 tsp cornstarch
1 tsp ground cinnamon (for filling)
50g water
185g cake flour
1.5 tsp baking powder
1 tsp ground cinnamon (for batter)
0.5 tsp salt
115g unsalted butter, softened
200g granulated sugar
3 large eggs, room temperature
1 tsp vanilla extract
150g milk
60g unsalted butter (for frosting)
125g cream cheese
75g powdered sugar
1 tsp ground cinnamon (for frosting)
1 tsp vanilla extract


Instructions

In a small pot, combine diced apples, brown sugar, cornstarch, cinnamon, and water.
Bring to a boil over medium-high heat, then reduce to a simmer and cook until apples are tender and liquid thickens.
Remove from heat and allow the compote to cool completely.
Preheat oven to 350°F and line a muffin pan with liners.
In a bowl, whisk together the flour, baking powder, cinnamon, and salt.
In a separate large bowl, cream 115g butter and granulated sugar until fluffy.
Beat in eggs one at a time, followed by the vanilla extract.
Gradually fold in the dry ingredients, alternating with the milk, until just combined.
Fill cupcake liners two-thirds full and bake for 20 minutes.
Once cupcakes are fully cooled, core the center and fill with the cooled apple compote.
Prepare frosting by whipping together 60g butter, cream cheese, powdered sugar, cinnamon, and vanilla.
Pipe frosting over the filled cupcakes and serve.

Notes

Store cupcakes in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving for the best texture. If you prefer a stronger apple flavor, you can simmer the apple peels in the water before straining them out to infuse the liquid.
