1 1/2 cups graham cracker crumbs
1/2 cup brown sugar
6 tbsp butter, melted
1 tsp apple pie spice
24 oz cream cheese, room temperature
1 cup granulated sugar
1/2 cup sour cream
1 tsp vanilla extract
3 large eggs
1 tbsp cornstarch
1/2 tsp cinnamon
1/4 cup heavy cream
2.5 lbs Gala apples
2 tbsp butter (for apple filling)
1/4 cup brown sugar (for apple filling)
1 tbsp flour (for apple filling)
6 oz toffee crunch pieces
Instructions
Peel, core, and dice apples into small cubes.
Melt 2 tbsp butter in a pot, add apples, brown sugar, apple pie spice, and vanilla; cook until soft.
Remove lid, reduce liquid, sprinkle with flour, stir, and set aside to cool.
Preheat oven to 325F and mix graham crumbs, brown sugar, melted butter, and apple pie spice for the crust.
Press crust into a 9-inch springform pan and wrap the exterior with heavy-duty foil.
Beat cream cheese and sugar until smooth; add sour cream, vanilla, and eggs one at a time.
Fold in cornstarch, cinnamon, and heavy cream until silky.
Pour batter into the crust, place in a water bath, and bake for 75 minutes.
Turn off the oven and let rest inside with the door cracked for an hour before chilling.
