Ingredients
2 3/4 cups diced Granny Smith apples
1 Tbsp melted unsalted butter
1 1/2 cups light brown sugar (divided)
2 tsp cinnamon
1/2 tsp nutmeg
1 Tbsp fresh lemon juice
1 1/2 Tbsp corn starch
1/2 cup cold water
2 1/4 cups graham cracker crumbs
12 oz cream cheese, softened
1/2 cup granulated sugar
1 1/2 tsp pure vanilla extract
2 Tbsp all-purpose flour
1 large egg
1/2 cup quick-cooking oats
Instructions
Preheat your oven to 350°F (175°C).
Combine graham cracker crumbs with a little melted butter and press into a pie dish to form the base.
In a bowl, beat the softened cream cheese with granulated sugar, flour, egg, and vanilla until smooth; spread this over the prepared crust.
In a saucepan, mix the diced apples, lemon juice, 1/2 cup of brown sugar, cinnamon, nutmeg, corn starch, and water; cook over medium heat until thickened.
Pour the apple mixture over the cheesecake layer.
In a separate bowl, mix the remaining brown sugar with the oats and sprinkle over the top of the apples.
