Ingredients
350g apple cider, room temperature
100g active sourdough starter
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
500g unbleached bread flour
12g coarse sea salt
1 medium apple, shredded
Instructions
In a large bowl, whisk 350g of cider with 100g of active starter.
Combine spices and set aside.
Add the flour, half of the spice blend, and salt to the liquid mixture.
Mix with a Danish dough whisk until a shaggy mass forms and knead by hand until smooth.
Cover and let the dough rest for 60 minutes.
Prepare shredded apple and dimple it into the dough.
Perform three sets of stretch and folds every 60 minutes.
Perform a final stretch and fold and bulk ferment in a warm spot for 3 hours until bubbly and domed.
Shape the dough into a round loaf and proof before baking.
Notes
Ensure your sourdough starter is active and bubbly before beginning to guarantee a good rise. Use fresh apple cider rather than juice for the best sweetness. Store in an airtight container for up to 3 days.
