Ingredients
2 cups graham cracker crumbs
1/2 tsp cinnamon
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup granulated sugar
2 cups heavy cream, cold
3/4 tsp lemon juice
1/2 cup apple butter
Instructions
Prepare a 9-inch springform pan by lightly spraying with nonstick cooking spray.
In a medium bowl, combine graham cracker crumbs and cinnamon; stir in melted butter until well moistened.
Press the crumb mixture firmly into the bottom of the prepared pan and refrigerate while preparing the filling.
In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
In a separate bowl, whip the cold heavy cream until stiff peaks form.
Gently fold the whipped cream and lemon juice into the cream cheese mixture until smooth.
Pour half of the cheesecake batter into the crust, then dollop half of the apple butter on top and swirl with a knife.
Repeat with the remaining batter and apple butter, creating decorative swirls.
Cover and refrigerate for at least 6 hours, or until set firmly.
