Ingredients

2 large red bell peppers
1 Tbsp extra virgin olive oil
1/4 tsp kosher salt


Instructions

Slice the peppers one half-inch to the side of the stem from top to bottom to remove four distinct pieces, leaving the core intact.
Scrape out and discard any membranes or seeds from the inside of each pepper piece.
Drizzle the inside of the pepper pieces with olive oil and sprinkle with salt.
Place the pepper pieces skin-side up in a preheated air fryer basket.
Cook at 400 degrees Fahrenheit for 14 to 15 minutes, or until the skins are thoroughly blistered and dark.
Remove the hot peppers to a large bowl and cover immediately with plastic wrap to steam for 10 minutes, then peel away the skin.

Notes

Covering the peppers with plastic wrap creates steam that makes the charred skins slide off easily. These peppers can be stored in an airtight container in the refrigerator for up to 5 days.
